Ingredients

2 large cucumbers, thinly sliced

1 cup crumbled feta cheese

1/4 cup fresh dill, finely chopped

1/4 red onion, thinly sliced

2 tablespoons extra-virgin olive oil

1 tablespoon lemon juice

1 teaspoon Dijon mustard

1/2 teaspoon honey

Salt and freshly ground black pepper, to taste


Instructions

1. Slice the cucumbers thinly (about 1/8-inch thick) and place them in a large mixing bowl along with the thinly sliced red onion.

2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until well combined.

3. Pour the dressing over the cucumbers and onions, then gently toss to coat evenly.

4. Sprinkle the crumbled feta and chopped dill over the salad, then give it a gentle toss to combine.

5. Let the salad sit for 5–10 minutes to allow flavors to meld, then serve chilled.

Notes

If cucumbers are very seedy, remove seeds before slicing to reduce excess moisture.

Always use fresh dill for the brightest flavor—dried dill won’t give the same freshness.

Adjust the dressing to your taste; add more lemon for tang or honey for sweetness.

Allowing the salad to rest a few minutes before serving deepens the flavor.

Best enjoyed fresh; store leftovers in an airtight container in the fridge for up to 2 days. Drain excess liquid before serving again.
