A refreshing twist on the classic Caprese, this Cucumber Caprese Salad features crisp cucumbers, juicy tomatoes, creamy mozzarella, and fresh basil, all drizzled with a tangy balsamic glaze.
Ingredients
2 cups cherry tomatoes, halved
1 large English cucumber, sliced into half-moons
1 cup mini mozzarella balls (bocconcini), halved
1/4 cup fresh basil leaves, torn
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic glaze
Salt and freshly ground black pepper, to taste
Instructions
1. In a large mixing bowl, combine the cherry tomatoes, cucumber slices, and mozzarella balls.
2. Gently toss to distribute ingredients evenly.
3. Add the torn basil leaves and drizzle with olive oil.
4. Season with salt and pepper to taste.
5. Toss lightly to combine.
6. Transfer the salad to a serving dish and drizzle with balsamic glaze just before serving.
Notes
For best flavor, serve the salad immediately after assembling.
You can chill the ingredients ahead of time, but add the balsamic glaze just before serving to maintain freshness and texture.
