1/4 small red onion, thinly sliced

2 tablespoons chopped fresh mint or parsley

1 tablespoon apple cider vinegar

1 tablespoon honey or maple syrup

2 tablespoons olive oil

Salt and pepper, to taste


Instructions

1. In a small bowl, whisk together lemon juice, apple cider vinegar, honey, olive oil, salt, and pepper until well combined.
